Home-Cooked Sardine | 沙丁鱼

Ingredients | 原料:

10 Fresh Sardine | 新鲜沙丁鱼10只
4 Onions | 洋葱4颗
1 Whole Garlic | 蒜米一颗
2 pieces of red Chili (big) | 大红辣椒2颗
4 pieces of red Chili (Small) | 小红辣椒4颗
1 Can of Tomato puree | 罐头番茄1罐
300ml of Chili sauce | 辣椒酱300毫升
200ml of Tomato sauce | 番茄酱 200毫升
100ml of Lime juice | 酸柑汁 100毫升
300ml of Water | 水300毫升
3 tbsp of Cooking Oil | 食用油 3大勺
1 tsp of Salt | 食用盐1茶匙


1. Set heat to medium and pour cooking oil, add the diced onions and minced garlic into the pressure cooker and stir-fry for 3 minutes.
2. Add all the sauces (canned tomato puree, chili sauce, tomato sauce) and mix well with water.
3. Add 10 fresh sardines and small red chilis.
4. Cover the lid by aligning both triangles on lid and bottom handle and lock it. Cook on maximum heat until the pressure indicator goes up to third level.

**Maximum level for most of the induction and electric cooktops is 2000 Watt, Medium level at 1000 Watt and Minimum heat at 500 Watt or lower.

**For gas stoves, Maximum heat is the widest flame under the bottom of pressure cooker/ pan without flaming the sides.

5. Turn heat to minimum and cook for another 15 minutes, switch off/remove from heat.
6. Wait for the pressure indicator to fully drop before opening the lid.
7. Add lime juice, salt and sliced (big) red chilis before serving


1. 开锅把火转至煸炒模式1000中火,倒入食用油,加入洋葱和蒜米爆香约三分钟。
2. 把酱汁(罐头番茄,辣椒酱,番茄酱)倒入并加水拌匀。
3. 将沙丁鱼和剖半的小红辣椒置入锅内。
4. 盖上锅盖,转至火锅模式并以2000大火煮至压力指示上升至第三阶段。
5. 把火转至500小火煮约15分钟即可关火。
6. 指示下降至气压锅完全泄压即可打开锅盖。
7. 起锅前加入酸柑汁,食用盐和大红辣椒作为调味和装饰即可。
